Ghana fried rice recipe

Growing up in Cape Coast, one of my favourite dishes was fried rice, the flavourful Ghana fried rice! In fact, I could eat fried rice almost every day! Over the years I have learned to perfect the recipe to my taste and I am excited to share the Ronny’s Kitchen recipe with the world!

Serves 5 to 6

Ingredients

  1. 500g rice (Jasmine/ Basmati)
  2. Four large eggs
  3. Sunflower, olive or avocado oil
  4. 1 kg chicken thighs, drumsticks or legs
  5. Carrots (3 – 4 medium size), grated
  6. Green pepper (1 large size), dice into cubes
  7. Spring onions (3-4), chopped into smaller pieces
  8. Green beans, chopped
  9. Cabbage (cut small piece – less than quarter of a fist and chop)
  10. Onions (half, chopped into small cubes)
  11. Black pepper
  12. Green chillies (medium hot), for seasoning chicken and preparing green shito
  13. Onion (one bulb), chopped to blend for green shito
  14. Green pepper (4 large size), chop and blend for green shito
  15. Ginger (X4 thumb sized) for seasoning chicken
  16. Garlic (1 bulb) for seasoning chicken
  17. Seasoning (Maggi, mushroom seasoning or other alternatives)
  18. Salt

NB: May add additional vegetables as you prefer.

Method

  1. Blend the ginger with one or two green chillies, chopped bulb of onion, garlic, seasoning and a quarter tea spoon of salt.
  2. Add the blended paste to the chicken and boil on medium heat for 20 minutes, turning the chicken from time to time.
  3. Wash the rice and cook with 3/4 of the chicken broth. Add additional salt for taste if needed. Once cooked, allow the rice to cool overnight or for 1 hour or more.
  4. While waiting for the rice to cool down, fry or grill the chicken as you prefer (if grilling set oven at 180 °C and grill for 25 minutes or until both sides are golden brown).

Preparing green shito

  1. Pour 150 mL of sunflower or vegetable oil into a deep pan and toss in some chopped onions once heated. Fry for 1 minute.
  2. Add the remaining 1/4 of the chicken broth and continue to stir for about 5 minutes.
  3. Add the blended green chillies and green peppers and continue to stir regularly for about 30 minutes or until fully cooked with the oil rising to the top. Add salt to taste and set aside.

Preparing the fried rice

  1. Heat up your wok or PFAS-free non-stick saucepan and add a tablespoon of oil
  2. Fry the eggs and scramble. Add a pinch of salt. Set this aside
  3. Add another tablespoon of oil and fry the hard vegetables (green beans and carrots) for about 1 minute. Add a pinch of salt to taste. Add in all the other vegetables and fry for another 30 seconds and set aside.
  4. Add a tablespoon of oil to the wok, add half of the cooked rice and half of the eggs and mix for 30 seconds. Add half of the already fried vegetables and mix ensuring that it is fully combined.
  5. Finally, add a tablespoon of soy sauce, a tablespoon of XO sauce or oyster sauce (optional) and stir into the rice. Fry the mix for about 3 to 5 minutes and should be ready to serve. NB: if you prefer a darker fried rice, can add more soy sauce.
  6. Repeat the steps above for the other half of the rice.
