Are you tired of fish and chips or chicken and fries? Why don’t you try this authentic Ghanaian fried chicken and yam fries (aka. yammies).

Ingredients

  1. Half/ quarter of a tuber of yam (can be purchased from an African market)
  2. Sunflower oil
  3. Salt
  4. Chicken thighs (6 pieces)/ may opt for red fish or salmon fillets
  5. Chilli powder (one teaspoon)
  6. Fresh ginger – thumb size (peel and cut into cubes)
  7. Medium-sized onion (chopped into cubes)
  8. One Maggi cube or powder (half teaspoon)
  9. Ground cumin (quarter teaspoon)
  10. Curry powder (quarter teaspoon)
  11. Shito sauce or ketchup

Method

Step 1: Peel the tuber of yam and cut them into slices of about 1.5 cm wide, 1.5 cm thick, and 8-10 cm long. Wash the slices thoroughly with water.

Step 2: Soak the yam in cold water and season with about a half tea spoon of salt. Allow to soak for about 15 minutes.

Step 3: Blend all the spices, seasoning, and onion into a thick paste. Add a bit of salt to taste.

Step 4: Marinate the chicken in the blended mix for about 30 minutes.

Step 5: Set your deep frying saucepan/ pot on the stove at high heat and add some sunflower oil.

Step 6: Once the oiled is heated, reduce heat to medium and fry the yam until golden brown and crunchy.

Step 7: Use the same oil to fry the chicken at medium heat or alternatively may use an air fryer. Make sure to turn the chicken at regular intervals until golden brown and crunchy on all sides – takes about 25-30 minutes to cook.
